VEGETABLE TRIPLE DECKER SANDWICH





Ingredients
  1. Brown bread     8 slices
  2. White bread     4 slices
  3. Potatoes, boiled & grated     4 medium
  4. Salt     to taste
  5. Black peppercorns, crushed     20
  6. Red chili flakes     1 teaspoon
  7. Green capsicum, chopped     1 medium
  8. Cheese spread     2 tablespoons
  9. Tomatoes, sliced thinly     2 medium
  10. Cucumbers, sliced thinly     2 medium
  11. Onions, sliced thinly     2 medium
  12. Pickled gherkins, sliced     5-6
  13. Iceberg lettuce     a few leaves
    Method
    Take potatoes in a bowl. Add salt, half the crushed black peppercorns, red chilli flakes, green capsicum and cheese spread and mix well.Take one slice of white bread and two slices of brown bread per sandwich. Butter them on one side lightly.

    Spread the potato mixture evenly on one slice of brown bread. Place some onion rings, sprinkle a little salt and a little crushed peppercorns and cover with a slice of white bread. Place a few cucumber and tomato slices over this. Sprinkle salt. Place a few gherkin slices and cover with the second slice of brown bread. Press lightly.

    Trim the edges. Cut into triangles. Make the other sandwiches similarly.
    Tear some lettuce leaves and place them over the sandwich along with a tomato and cucumber slice and fix all with a toothpick and serve immediately.
